fried mackerel with Mexican salad

I never ate mackerel  beside the smoke Russian version which i love!!!but i always see it in the fish store fresh so i decided to cook it.Here is the recipe,but must worn you,if you don't like strong fried fish smell don't do it!!!or put a bowl of white vinegar next to the stove.
You will need fresh mackerel,gutted,salt,black pepper,paprika
Mix salt,black pepper,paprika.Wash the fish,pat it  dry,rub the mix in.Fry it in olive oil.
For the salad:
1can black beans
1can whole kernels corn
1lime
1jalapeno pepper
2 tomatoes
1 avocado
half red onion
cilantro
2tbs olive oil
salt
paprika

French onion soup

I love this soup!!!and i love french cooks for it!!!
Traditional French onion soup is a combination of rich beef broth and sweet, caramelized onions, topped with French bread, and melted cheese.
So all you need is onions,beef broth,white bread and we used provolone cheese

my love's creation:spicy pork stir-fry with veggies

So today i came from work and my loved one was cooking dinner already!!!so i couldn't help myself and took some pictures of the cooking process then enjoyed my dinner:)It was delicious!!!

Dinner at Melt

I would like to introduce you to a very nice restaurant with great food,and with a very friendly and talented  executive chef -Mark Simmons,former Top Chef contestant .I went to Melt after a business meeting with chef Mark and being very curious to try some of his dishes.So i did!!!And i wasn't disappointed(not that i was waiting to be)
We had a delicious dinner for 2 including appetizer,main course ,desert and drinks.And as it was 10/10/10 the entrees were 10$ which was a bargain!!!So check there website for specials http://www.meltnyc.com/
Must say the stuff was very friendly and nice.
So i am posting some pictures of our dinner with some comments and recommend you to check it out!

So as you can see we had:
oysters with champagne mignonette -delicious!!!
Then we had fish:Salmon and red snapper.I really enjoyed the cucumber -strawberry and juliened green apple served with salmon.Great combination.I will use it my cooking too:)

The drinks were very good too
Desert was yummy!I had the one called Pavlova which was a little bit too sweet to my taste as i dont really eat sweets but i loved the texture and the berries on the top,believe me my plate was empty!!!
Deni had Panna cotta is it was so light( a little bit tangy,my ideal dessert) that you have the feeling you can have 10 pieces!!!
Another thing i liked about the restaurant -open kitchen,you can see how the food is cooked.
The design  is modern and it is a great place for a date in my opinion
Thank you Melt and chef Mark.Deffinetly will be back!

MOLDOVAN WINES

So as i visited Mark Simmons's restaurant MELT,he asked me about Moldovan wines,so for him and everybody else interested here is some info:
Buying  wine in Moldova is as cheap as buying oranges in Florida the cheapest is about  2 US dollars:))Moldova has a well established wine industry. It has a vineyard area of 148,500 hectares (367,000 acres) of which 107,800 hectares (266,000 acres) are used for commercial production. The remaining 40,700 hectares (101,000 acres) are vineyards planted in villages arround the houses used to make home-made wine, or "vin de casa". Many families have their own recipes and strands of grapes that have been passed down through the generations. Most of the country's commerial wine production is for export.(Wikipedia)
Moldovan viticulture is characterized by a large variety of grapes, 67% of the total vineyard area is planted with European varieties. 69% of the total vineyard area is planted with white grape varieties and 31% with red grape varieties. See below the structure of vineyards by their varieties

White varieties: Chardonnay, Sauvignon Blanc, Aligoté, Pinot Gris, Pinot Blanc, Riesling, Traminer, Muscat, Silvaner, Müller-Thurgau, Rkatsiteli.
Red varieties: Cabernet Sauvignon, Merlot, Pinot Noir, Malbec, Saperavi, Gamay.
Recently Syrah, Cabernet Franc, Petit Verdot, Carignan, Montepulciano, Sémillon, Ugni Blanc, and Tempranillo were conditionally registered for trial

The Moldovan wine collection "Mileştii Mici", with 1.5 million bottles, is the largest wine collection in Europe, according to the Guinness Book. It stretches for 200 km, of which only 50 km are currently in use.
The Cricova winery also has an extensive network of underground caves that stretch for 120 km

Russian fish soup (UHA)

We caught this it PA
So for this yummy soup you need fresh fish,preferred just caught,but any fish will do
a couple potatoes,onion,bay leaves,50ml of vodka,parsley or dill to garnish.The ideal place to make it is open fire,but if you don't have it a stove if fine too:)
So you ll need to bring water to boil then throw in there the potatoes and one or 2 big onions cut in half.When the potatoes are soft you can put the fish in together with the heads,if it is small put it whole,if it is big cut it into pieces,wait until the fish starts to come off the bone,add salt black pepper and Vodka! garnish with greens and serve

cake Nostalgy

We used to make this cake back home as the easiest cake when we wanted something sweet.IT is easy to make and sooo sweet!!!
They sell big wafers in russian store and not only,i think.Also you ll need dulce de leche in russia is "zgushenka" and crushed walnuts that is it.If you can find Dulce de leche,follow Alton Brown recipe for it.

Salmon burgers(my way)

So far didn't make a variety of dishes out of salmon beside the baked or broiled one,so here is a new delicious dish that is very versatile ,can be places between buns ,served with rice,sauce.I served it with steamed vegetables
 2 lb salmon fillet
3 eggs
bread crumbs
1-2 red  onions
salt
black pepper
paprika
1 garlic clove

Chop the salmon into tiny cubes add onion,salt,pepper,bread crumbs and eggs ,mix well and with and using a big spoon put the mix into a pan with hot oil forming burger shapes.Fry on both sides and enjoy!!!
